Ingredients:


- 1 (3-4 pound) beef brisket, trimmed
- 1/4 cup kosher salt
- 1/4 cup brown sugar
- 2 tablespoons paprika
- 2 tablespoons garlic powder

- 1 tablespoon black pepper
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 tablespoon mustard powder
- 1/4 cup apple cider vinegar
- 1/4 cup water
- Wood chips for smoking (such as hickory or mesquite)



Instructions:



1. In a small bowl, mix together the kosher salt, brown sugar, paprika, garlic powder, onion powder, black pepper, cumin, chili powder, and mustard powder to make a dry rub.

2. Rub the dry rub all over the beef brisket, making sure to coat it evenly.

3. Cover the brisket with plastic wrap and refrigerate for at least 8 hours or overnight.

4. Preheat your smoker to 225°F and add the wood chips according to the manufacturer's instructions.

5. In a small bowl, mix together the apple cider vinegar and water.

6. Place the brisket in the smoker and smoke for 6-8 hours, or until the internal temperature reaches 195°F.

7. Every hour, spray the brisket with the apple cider vinegar mixture to keep it moist.

8. Once the brisket is done, remove it from the smoker and let it rest for 30 minutes.

9. Slice the brisket against the grain and serve.
