Ingredients

4–5 lbs beef brisket (first cut, trimmed)

3 Tbsp olive oil

3 onions, sliced

4 carrots, cut in chunks

1 cup prunes
-
1 cup dried apricots
-
½ cup raisins
-
1 cup beef or chicken stock
-
1 cup sweet red wine or grape juice

3 Tbsp tomato paste
-
3 Tbsp honey
-
2 tsp cinnamon
-
1 tsp ground ginger
-
1 tsp kosher salt
-
½ tsp black pepper
Instructions

Sear brisket in olive oil until browned; transfer to crockpot.

Sauté onions until caramelized; add to crockpot with carrots and dried fruits.

Mix stock, wine, tomato paste, honey, and spices; pour over brisket.

Cook on low for 8–10 hours or high for 5–6 hours.

Rest brisket 15 minutes before slicing. Serve with sauce and softened fruit.
