Quick Miso & Vegetable Soup - Immune Boosting Recipes - 5 Ingredients - Kosher Parve
Ingredients:
- 4 cups vegetable broth (kosher, parve)
- 2 tablespoons miso paste (white or yellow)
- 1 medium carrot, diced
- 1 small zucchini, diced
- 1 teaspoon fresh ginger, grated
Instructions:
1. Heat the vegetable broth in a saucepan over medium heat.
2. Add carrot and simmer 8–10 minutes until slightly tender.
3. Add zucchini and ginger; cook 3–5 more minutes.
4. Dissolve miso in a small amount of hot broth and return to the pot. Do not boil after adding miso.
5. Serve hot. Optional: garnish with fresh parsley or green onions.
