Vegan Pomegranate Molasses & Balsamic Salad (Kosher): Bright, Festive And Bursting With Flavor

Ingredients:


  • 4 cups mixed greens (arugula, spinach, or romaine)
  • 1/2 cup pomegranate seeds (fresh or thawed from frozen)
  • 1/4 cup toasted walnuts, pecans, or almonds
  • 1 small apple or pear, thinly sliced
  • 1/4 cup dried cranberries or cherries (unsweetened, kosher)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp pomegranate molasses
  • 1 tsp maple syrup (optional, for added sweetness)
  • Salt and pepper, to taste



Instructions:


1. Make the dressing:

In a small bowl, whisk together olive oil, balsamic vinegar, pomegranate molasses, maple syrup (if using), salt, and pepper until smooth.

2. Assemble the salad:

In a large bowl, combine mixed greens, pomegranate seeds, nuts, sliced apple or pear, and dried cranberries.

3. Dress and toss:

Drizzle the dressing over the salad and toss gently to coat everything evenly.

4. Serve immediately for the best texture and flavor.
