For the Crust


1 ½ cups crushed kosher graham crackers (or digestive biscuits)


4 Tbsp melted coconut oil (healing for digestion & immunity)


1 Tbsp pure honey (soothing & antibacterial)



For the Banana Layer


2 ripe bananas, thinly sliced


1 tsp fresh lemon juice (keeps bananas fresh & adds vitamin C)



For the Cream Filling


1 (3.4 oz) box instant kosher vanilla pudding mix (pareve or dairy)


1 ½ cups cold almond milk (or regular milk if preferred)


½ cup whipped coconut cream (or kosher whipped topping/whipped cream)



For the Topping


Extra banana slices


A sprinkle of ground cinnamon


Optional: crushed walnuts or pecans for omega-3s & crunch

1. Prepare the Crust


Mix graham cracker crumbs, coconut oil, and honey until combined.


Press 2 Tbsp into each muffin liner, silicone cup, or small ramekin.


Chill for 10 minutes to set.




2. Banana Layer


Toss banana slices with lemon juice.


Place a few slices on top of each crust.




3. Make the Cream Filling


Whisk pudding mix with cold almond milk until thickened.


Gently fold in whipped coconut cream to make it light and fluffy.




4. Assemble the Mini Pies


Spoon the cream filling over the bananas in each crust.


Smooth the tops with a spoon.
