Cooking Vessel
Air fryer (basket or tray style)
Mixing bowls
Box grater or food processor
---
Ingredients
3 medium zucchinis (about 1 lb)
1 small onion, grated
2 large eggs
½ cup matzo meal, breadcrumbs, or flour
3 Tbsp finely chopped fresh parsley or dill
1 tsp kosher salt
½ tsp black pepper
½ tsp garlic powder (optional)
2 Tbsp olive oil or avocado oil (plus more for brushing/spraying)
---
Instructions
1. Prep zucchini
Grate zucchini using a box grater. Place in a clean towel, sprinkle with a little salt, and let sit 5 minutes. Wring out as much liquid as possible.
2. Make batter
In a mixing bowl, combine zucchini, onion, eggs, matzo meal/flour, herbs, salt, pepper, and garlic powder. Mix until well combined. Batter should be sticky but not watery.
3. Shape fritters
Scoop about 2 Tbsp of mixture and flatten slightly into small patties.
Brush lightly with oil or spray for crispness.
4. Air fry
Preheat air fryer to 375°F (190°C).
Spray or brush basket lightly with oil.
Place fritters in a single layer (do not overcrowd).
Cook for 10–12 minutes, flipping halfway, until golden brown and crisp.
5. Serve hot for best texture.

Dietary Adaptations
Gluten-Free: Use gluten-free matzo meal or chickpea flour instead of regular matzo meal/flour.
Pesach-Friendly: Replace matzo meal with potato starch.
Low-Oil: Skip oil in the batter and just lightly spray fritters before cooking.
---
Tips & Troubleshooting
Too watery? Make sure to squeeze zucchini very well—moisture makes fritters soggy.
Falling apart? Add 1–2 more Tbsp of flour/matzo meal to bind.
Not crispy? Brush or spray a bit more oil before cooking.
Burning too quickly? Lower temperature to 350°F and cook slightly longer.
---
Serving Suggestions
Serve with pareve sour cream alternative, tahini sauce, or yogurt-based dip.
Pair with roasted chicken, grilled fish, or Israeli salad for a light meal.
Enjoy as a dairy meal with feta cheese and a fresh tomato-cucumber salad.

Notes
Best eaten fresh from the air fryer while still crisp.
Can be stored in the fridge for up to 3 days; reheat in the air fryer at 350°F for 3–4 minutes.
Freezing not recommended (texture suffers), but batter can be prepped and refrigerated up to 1 day in advance.
