Cooking Vessels

  • Measuring cups and spoons

  • Tongs

  • Two forks or stand mixer for shredding

  • Cutting board

Ingredients

  • 2 pounds kosher boneless, skinless chicken breasts or chicken thighs

  • 1 cup low-sodium kosher chicken broth

  • 1 tablespoon extra-virgin olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon paprika

  • 1 teaspoon dried parsley

  • ½ teaspoon kosher salt (adjust to taste)

  • ¼ teaspoon freshly ground black pepper

Optional Flavor Boosters

  • 1 tablespoon fresh lemon juice

  • ½ teaspoon turmeric

  • ½ teaspoon dried oregano

Instructions

Step 1: Prepare the Chicken

Place the chicken into the Instant Pot. Drizzle with olive oil.

In a small bowl, combine garlic powder, onion powder, paprika, parsley, salt, and pepper. Sprinkle evenly over the chicken.

Pour the kosher chicken broth around the chicken.

Step 2: Pressure Cook

Secure the lid and set the valve to "Sealing."

Cook on High Pressure:

  • Chicken breasts: 15 minutes

  • Chicken thighs: 12 minutes

Step 3: Natural Release

Allow a natural pressure release for 10 minutes.

Carefully perform a quick release for any remaining pressure.

Step 4: Shred the Chicken

Transfer chicken to a large bowl.

Shred using two forks or place in a stand mixer fitted with the paddle attachment and mix on low speed for 20–30 seconds.

Step 5: Moisten and Serve

Return some of the cooking liquid to the shredded chicken to keep it moist and flavorful.

Serve immediately or store for meal prep.

Tips & Troubleshooting

Chicken Seems Dry

Use chicken thighs instead of breasts for extra moisture, or mix in additional cooking liquid after shredding.

Chicken Won't Shred Easily

It may be slightly undercooked. Return to the Instant Pot and cook for an additional 2–3 minutes under pressure.

Too Much Liquid

After removing the chicken, use the Sauté function to reduce the liquid before mixing it back in.

Bland Flavor

Add extra garlic powder, lemon juice, fresh herbs, or additional kosher seasoning blend.

Meal Prep Success

Store shredded chicken in portions with a little broth to maintain moisture throughout the week.

Serving Suggestions

Serve the shredded chicken:

  • In lettuce wraps

  • On top of large green salads

  • Stuffed into baked sweet potatoes

  • In grain bowls

  • Inside gluten-free wraps

  • Alongside quinoa or brown rice

Kosher Considerations

  • Use only certified kosher chicken and kosher-certified broth.

  • Ensure all spices and seasonings carry reliable kosher certification.

  • Since this is a meat recipe, do not serve with dairy-based sides or sauces.

  • Use utensils and cookware designated for meat according to your kosher kitchen practices.

  • If serving at a mixed gathering, clearly label the dish as meat ("fleishig").

Shabbat Adaptations

Prepare Before Shabbat

Cook and shred the chicken on Friday before candle lighting.

Keep Warm

Transfer to a kosher slow cooker or warming tray approved for Shabbat use.

Reheat

Follow your community's halachic customs regarding reheating fully cooked food on Shabbat.

Shabbat Lunch Option

Serve with roasted vegetables, kugel, salads, and challah (if not following a low-carb plan).
