2 Tbsp olive oil (or avocado oil)
1 medium onion, diced
3 cloves garlic, minced
2 medium carrots, peeled and sliced
2 medium parsnips, peeled and sliced
1 medium sweet potato, peeled and diced
2 medium Yukon gold potatoes, diced
2 celery stalks, sliced
1 tsp turmeric powder (or 1 inch fresh turmeric root, grated)
1 tsp ground ginger (or 1 Tbsp fresh ginger, grated)
1 tsp dried thyme
1 bay leaf
6 cups low-sodium chicken broth
2 cups cooked shredded chicken (rotisserie or poached)
2 Tbsp chopped fresh parsley (plus more for garnish)
Juice of 1 lemon
Sea salt & black pepper, to taste

🥄 Instructions
1. Sauté the aromatics:
In a large soup pot, heat olive oil over medium heat. Add onion, garlic, carrots, parsnips, and celery. Sauté 5–7 minutes, until softened and fragrant.
2. Add spices & root vegetables:
Stir in turmeric, ginger, and thyme. Add sweet potato and Yukon gold potatoes. Cook for 2–3 minutes to coat vegetables with seasoning.
3. Simmer:
Pour in chicken broth and add the bay leaf. Bring to a boil, then reduce heat and simmer for 25–30 minutes, until root vegetables are tender.
4. Add chicken & finish:
Stir in shredded chicken, parsley, and lemon juice. Simmer for another 5 minutes to warm through. Season with salt and pepper to taste.
5. Serve:
Ladle into bowls, garnish with extra parsley, and enjoy warm.
