2 large sweet potatoes, peeled and cubed (about 4 cups)


2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and chopped


2 medium carrots, peeled and chopped


1 tsp ground cinnamon


½ tsp ground ginger (or 1 tsp fresh grated ginger)


¼ tsp turmeric


1 tsp salt (or to taste)


½ tsp black pepper


5 cups low-sodium vegetable broth (ensure kosher-certified)


1 cup unsweetened coconut milk (or other kosher pareve milk alternative)


1 Tbsp fresh lemon juice (for brightness)


2 Tbsp chopped fresh parsley (for garnish)

1. SautΓ© base:

Heat olive oil in a large pot over medium heat. Add onion and garlic. Cook for 4–5 minutes until softened.



2. Add vegetables & fruit:

Stir in sweet potatoes, apples, and carrots. Add cinnamon, ginger, turmeric, salt, and black pepper. Cook for 2–3 minutes, stirring to coat.



3. Simmer:

Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 25–30 minutes, until sweet potatoes and carrots are tender.



4. Blend to creamy:

Remove from heat. Use an immersion blender (or carefully transfer in batches to a blender) to puree until smooth.



5. Finish soup:

Stir in coconut milk and lemon juice. Adjust seasoning to taste.
