Cook Time: 0 min

Ingredients:

4 cups mixed greens (arugula, spinach, or romaine)

1/2 cup pomegranate seeds (fresh or thawed from frozen)

1/4 cup walnuts or pecans, lightly toasted

1/4 cup crumbled feta or goat cheese (optional, check kosher certification)

1 small red onion, thinly sliced

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

1 tbsp pomegranate molasses

1 tsp honey (optional)

Salt and pepper, to taste

---

Instructions:

1. Prepare the dressing:

In a small bowl, whisk together olive oil, balsamic vinegar, pomegranate molasses, honey (if using), salt, and pepper until smooth.

2. Assemble the salad:

In a large bowl, combine mixed greens, pomegranate seeds, toasted nuts, and red onion slices.

3. Dress the salad:

Drizzle the dressing over the salad and toss gently to coat everything evenly.

4. Add cheese (optional):

Sprinkle crumbled feta or goat cheese on top before serving.

5. Serve immediately for the freshest taste.

---

Tips:

For a more intense flavor, marinate the onions in a bit of the pomegranate molasses dressing for 10 minutes before adding them to the salad.

Can also add sliced pears or apples for extra sweetness and texture.

Pair with grilled chicken or salmon for a complete meal.
