2 Tbsp olive oil


1 medium onion, chopped


2 cloves garlic, minced


2 large sweet potatoes, peeled and cubed (about 4 cups)


2 medium apples (Honeycrisp or Gala for sweetness, Granny Smith for tartness), peeled, cored, and chopped


2 medium carrots, peeled and chopped


1 tsp ground cinnamon


½ tsp ground ginger (or 1 tsp fresh grated ginger)


¼ tsp turmeric


1 tsp salt (or to taste)


½ tsp black pepper


5 cups low-sodium vegetable broth (kosher-certified)


1 cup unsweetened coconut milk (or other kosher pareve milk alternative)


1 Tbsp fresh lemon juice



Festive Garnishes (choose any or mix):


2 Tbsp pomegranate molasses (drizzle)


¼ cup pomegranate seeds


¼ cup toasted pecans or walnuts (chopped, optional for non-nut-allergic guests)


2 Tbsp fresh parsley or cilantro, chopped


A swirl of extra coconut milk or olive oil for presentation

1. Prepare the soup base:

Heat olive oil in a large soup pot over medium heat. Add onion and garlic, sautΓ© 4–5 minutes until softened.



2. Add main vegetables & fruit:

Stir in sweet potatoes, apples, and carrots. Add cinnamon, ginger, turmeric, salt, and pepper. Cook for 2–3 minutes, stirring well.



3. Simmer:

Pour in broth. Bring to a boil, then reduce heat and simmer 25–30 minutes, until vegetables are tender.



4. Blend:

Remove from heat. Blend until smooth with an immersion blender (or carefully in a blender in batches).



5. Finish:

Stir in coconut milk and lemon juice. Adjust seasoning as needed.



6. Serve with festive flair:

Ladle soup into bowls. Garnish with a drizzle of pomegranate molasses, a sprinkle of pomegranate seeds, toasted pecans or walnuts, and fresh herbs. Optionally, swirl in extra coconut milk for a decorative touch.
