1 large onion, diced
3 cloves garlic, minced
2 medium carrots, peeled & diced
2 celery stalks, diced
1 parsnip, peeled & diced (optional)
1 medium potato, diced
1 cup pearl barley (rinsed and drained)
8 cups low-sodium vegetable broth (or mushroom broth, ensure kosher-certified)
1 bay leaf
1 tsp dried thyme
1 tsp paprika
½ tsp black pepper (or more, to taste)
1 tsp salt (or to taste)
2 cups chopped kale or spinach (added at the end)
2 Tbsp fresh parsley, chopped (for garnish)

🥄 Instructions
1. Sauté aromatics:
Heat olive oil in a large soup pot over medium heat. Add onion, garlic, carrots, celery, and parsnip. Cook for 6–7 minutes, until softened.
2. Add barley & spices:
Stir in barley, thyme, paprika, salt, and black pepper. Cook for 2 minutes to toast lightly.
3. Simmer the soup:
Add broth, potato, and bay leaf. Bring to a boil, then reduce heat and simmer uncovered for 45–50 minutes, stirring occasionally, until barley is tender and soup thickens.
4. Add greens:
Stir in kale or spinach and cook for 3–4 minutes until wilted. Remove bay leaf.
5. Finish & serve:
Adjust seasoning, garnish with parsley, and serve hot with bread or challah.
