Ingredients
4 medium russet potatoes, peeled
1 small yellow onion
2 large eggs
3 Tbsp matzo meal (or all-purpose flour for non-Pesach use)
3 Tbsp neutral oil (canola, avocado, or olive oil), divided
1 ½ tsp kosher salt
½ tsp black pepper
½ tsp garlic powder (optional)
Nonstick spray for the air fryer basket
---
Instructions
1. Prep potatoes & onion
Grate potatoes and onion using a box grater or food processor.
Place mixture in a clean kitchen towel and wring out as much liquid as possible. (This prevents soggy kugel.)
2. Mix batter
Transfer grated potato-onion mix to a bowl.
Stir in eggs, matzo meal, 2 Tbsp oil, salt, pepper, and garlic powder. Mix well.
3. Shape bites
With lightly oiled hands, scoop about 1–2 Tbsp of mixture and roll into small balls or oval bites.
Brush or spray lightly with remaining oil for crispness.
4. Air fry
Preheat air fryer to 375°F (190°C).
Lightly spray basket with oil to prevent sticking.
Arrange kugel bites in a single layer (don’t overcrowd).
Air fry for 18–22 minutes, shaking halfway, until golden brown and crisp.
5. Serve
Enjoy warm as a side dish, appetizer, or snack.

Dietary Adaptations
Gluten-Free: Use gluten-free matzo meal or potato starch instead of matzo meal.
Pesach-Friendly: Replace matzo meal with potato starch.
Low-Oil: Use only cooking spray, omit added oil in batter (texture will be less rich but still crispy).
---
Tips & Troubleshooting
Too wet? Drain potatoes thoroughly; excess water makes soggy kugel.
Falling apart? Add 1–2 more Tbsp matzo meal to bind.
Not crispy enough? Brush lightly with extra oil before air frying.
Cooking unevenly? Shake basket halfway and cook in smaller batches.

Serving Suggestions
Serve with applesauce or pareve sour cream alternative for dipping.
Pair with roasted chicken, brisket, or fish for Shabbat meals.
Add fresh chopped parsley or dill for garnish.
---
Notes
Best eaten fresh from the air fryer for maximum crispness.
Can be frozen after cooking; reheat in the air fryer at 350°F for 5–7 minutes until hot.
Great for Sukkot, Chanukah, or as a fun
twist on traditional kugel for Shabbat.
