Servings: 8–10
Yield: About 6–7 cups
Prep Time: 15 minutes
Cook Time: 4–6 hours on low (or 2–3 hours on high)
Difficulty: Very Easy
Cooking Vessel: 4–6 quart slow cooker (crockpot)

Ingredients

  • 10 medium apples (a mix of sweet and tart, such as Gala, Fuji, and Granny Smith), peeled, cored, and diced

  • ½ cup water (or apple juice for richer flavor)

  • ¼ cup honey or maple syrup (optional, adjust to sweetness)

  • 2 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ½ tsp ground cloves (optional, for warmth)

  • 1 Tbsp lemon juice

  • Pinch of kosher salt

  • Optional garnish: chopped toasted walnuts or pecans

Instructions

  1. Prepare apples: Peel, core, and dice apples into bite-sized chunks.

  2. Load crockpot: Place apples, water (or juice), honey/maple syrup, spices, lemon juice, and salt into the crockpot. Stir to combine.

  3. Set to cook: Cover and cook on low for 4–6 hours or high for 2–3 hours, until apples are very soft.

  4. Mash or blend: For a chunky compote, lightly mash with a fork or potato masher. For a smooth texture, use an immersion blender.

  5. Serve warm or chilled: Spoon over challah, kugel, pancakes, or enjoy as a side dish.
