Kosher No-Bake Mini Banana Cream Pies Recipe

Ingredients (makes 6 mini pies)


Crust


1 ½ cups crushed kosher graham crackers (or gluten-free tea biscuits if preferred)


4 Tbsp melted coconut oil (healing for digestion & skin)


1 Tbsp honey (natural sweetener, antibacterial)



Banana Layer


2 ripe bananas (sliced)


1 tsp lemon juice (keeps bananas fresh, adds vitamin C)



Cream Filling


1 (3.4 oz) box instant kosher vanilla pudding mix (pareve or dairy)


1 ½ cups cold almond milk (or cow’s milk if preferred)


½ cup whipped coconut cream (or kosher whipped cream)



Topping


Extra banana slices


A sprinkle of cinnamon (healing spice for blood sugar balance)


Optional: crushed walnuts or pecans for added crunch & brain-boosting omega-3s

Directions


1. Make the Crust


In a bowl, mix crushed graham crackers, coconut oil, and honey until crumbly.


Press about 2 Tbsp of mixture into the bottom of each muffin liner or small ramekin.


Chill in the fridge for 10 minutes to firm up.




2. Banana Layer


Slice bananas and toss lightly with lemon juice.


Place a few slices over each crust.




3. Prepare the Cream


Whisk pudding mix with almond milk until thick.


Fold in whipped coconut cream for a light, healing mousse texture.




4. Assemble Pies


Spoon cream mixture over bananas in each mini crust.


Smooth the tops with a spoon.




5. Chill & Garnish


Refrigerate at least 1 hour to set.


Before serving, top with fresh banana slices, a sprinkle of cinnamon, and optional nuts.
