Kosher Rosh Hashanah Arugula & Pomegranate Salad Recipe

Ingredients
- 4 cups fresh arugula, washed and dried
- 1 cup pomegranate seeds
- 1 crisp apple (Honeycrisp or Fuji), thinly sliced
- ¼ cup walnuts or pecans, toasted (kosher)
- ¼ cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey (kosher)
- Pinch of salt and pepper
Instructions
1. Make the dressing:
Whisk olive oil, lemon juice, honey, salt, and pepper in a small bowl.
2. Assemble salad:
In a large bowl, combine arugula, pomegranate seeds, apple slices, and nuts.
3. Dress and serve:
Drizzle dressing over the salad and toss gently. Serve immediately.
