Citrus-Honey Turkey With Cucumber & Cilantro Recipe | Shabbat Dinner | Kosher Healing Recipe 


Shabbat is a time for rest, renewal, and gathering around the table with foods that not only taste delicious but also bring healing to the body and soul. This week, I created a simple yet nourishing recipe using turkey breast, cucumber, cilantro, coconut oil, honey mustard, and lemon juice—all kosher ingredients that are naturally healing.


This dish combines protein-rich turkey with refreshing cucumber and detoxifying cilantro, all brightened by a citrus-honey glaze that’s both sweet and tangy. It’s perfect for a light yet satisfying Shabbat dinner.

Turkey Breast – A lean source of protein that supports muscle repair and provides tryptophan, which helps calm the nervous system.


Cucumber – Hydrating, cooling, and cleansing for the digestive system.

🍽️ Recipe: Citrus-Honey Turkey with Cucumber & Cilantro


Serves: 4

Prep Time: 15 minutes

Cook Time: 30 minutes


Ingredients:


2 lbs turkey breast, skinless


2 Tbsp coconut oil, melted


2 Tbsp honey mustard (kosher-certified)


2 Tbsp fresh lemon juice


1 cucumber, thinly sliced


½ cup fresh cilantro, chopped


Sea salt & black pepper, to taste



Instructions:


1. Prepare the Marinade:

In a small bowl, whisk together coconut oil, honey mustard, lemon juice, salt, and pepper.



2. Season the Turkey:

Place turkey breast in a shallow dish or resealable bag. Pour half of the marinade over the meat, coating well. Reserve the other half for drizzling after cooking. Cover and refrigerate for at least 1 hour (or overnight for deeper flavor).



3. Cook the Turkey:

Preheat oven to 375°F (190°C). Place marinated turkey breast in a baking dish. Roast for 25–30 minutes, or until the internal temperature reaches 165°F. Baste once halfway through for extra juiciness.



4. Prepare the Salad Garnish:

While the turkey roasts, combine sliced cucumber and chopped cilantro in a bowl. Lightly drizzle with a spoonful of the reserved marinade (not the raw one used for marinating) for brightness.



5. Serve:

Slice the turkey breast, drizzle with the remaining sauce, and top with fresh cucumber-cilantro salad.
