Ingredients:
4 boneless, skinless chicken breasts
1/4 cup olive oil
2 lemons (juice + zest)
3 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, paprika, salt, and pepper.
2. Marinate the Chicken: Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken, ensuring each piece is coated. Refrigerate for 1–2 hours.
3. Preheat the Grill: Heat your grill to medium-high (about 400°F / 200°C). Lightly oil the grates.
4. Grill the Chicken: Remove chicken from marinade and shake off excess. Grill for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C).
5. Rest and Serve: Let chicken rest 5 minutes before slicing. Garnish with fresh parsley and serve with your favorite sides.
Chef’s Tip: For extra flavor, reserve a little marinade (before adding chicken) and brush it on the chicken during the last 2 minutes of grilling.
