Lentil & Carrot Comfort Soup Recipe - Kosher Healing - Cozy, Nourishing, and Packed With Plant-based Goodness 🥣




A warm, hearty soup filled with protein-rich lentils and naturally sweet carrots. Perfect for chilly days or when you need a gentle, comforting meal.

🛒 Ingredients


2 Tbsp olive oil (or avocado oil)


1 medium onion, diced


3 cloves garlic, minced


5 large carrots, peeled and sliced into rounds


2 celery stalks, diced


1 ½ cups dried red lentils, rinsed


1 tsp ground cumin


1 tsp smoked paprika


½ tsp turmeric


1 bay leaf


6 cups low-sodium vegetable broth (or water + bouillon)


Juice of 1 lemon (optional, for brightness)


2 Tbsp fresh parsley or cilantro, chopped (for garnish)


Salt & black pepper, to taste

🥄 Instructions


1. Sauté the aromatics:

Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–7 minutes, until softened.



2. Add spices & lentils:

Stir in cumin, paprika, and turmeric. Add lentils and mix to coat with seasonings.



3. Simmer the soup:

Pour in vegetable broth and add the bay leaf. Bring to a boil, then reduce heat to low and simmer for 25–30 minutes, until carrots and lentils are soft.



4. Adjust & blend (optional):

For a creamy texture, blend part of the soup with an immersion blender, leaving some chunks for heartiness.



5. Finish & serve:

Stir in lemon juice, season with salt and pepper, and garnish with fresh herbs. Serve hot with crusty bread.
