Arugula and Pomegranate Salad Recipe | Kosher

Ingredients


4 cups fresh arugula, washed and dried


1 cup pomegranate seeds (about 1 medium pomegranate)


½ cup walnuts or pecans, toasted (optional, ensure kosher)


¼ cup thinly sliced red onion


¼ cup extra-virgin olive oil


2 tablespoons fresh lemon juice


1 teaspoon honey (optional, ensure kosher)


Salt and pepper, to taste


Optional garnish: crumbled feta or goat cheese (if kosher dairy allowed)

Instructions


1. Prepare the dressing:

In a small bowl, whisk together olive oil, lemon juice, honey (if using), salt, and pepper until emulsified.



2. Assemble the salad:

In a large salad bowl, combine arugula, pomegranate seeds, walnuts/pecans, and red onion.



3. Dress the salad:

Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.



4. Serve:

Optional: Sprinkle with crumbled kosher feta or goat cheese for extra flavor. Serve immediately.
