Mediterranean Olive & Tomato Chicken Recipe
🍅 Mediterranean Olive & Tomato Chicken

Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 medium onion, thinly sliced
3 garlic cloves, minced
1 can (14 oz) diced tomatoes
1/2 cup Kalamata olives, pitted and halved
1 tsp dried oregano
1 tsp dried basil
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Optional: 1/4 tsp crushed red pepper flakes for heat
Instructions:
1. Preheat Oven: Set oven to 375°F (190°C). Lightly grease a baking dish.
2. Sear Chicken: In a skillet over medium heat, warm olive oil and sear chicken breasts for 2–3 minutes per side until lightly browned. Transfer to the baking dish.
3. Prepare Sauce: In the same skillet, sautĂ© onions and garlic for 2–3 minutes. Add diced tomatoes, olives, oregano, basil, salt, pepper, and red pepper flakes (if using). Simmer for 3–4 minutes.
4. Bake: Pour the tomato-olive mixture over the chicken in the baking dish. Bake for 25–30 minutes, until chicken reaches an internal temperature of 165°F (74°C).
5. Serve: Garnish with fresh parsley and serve with rice, couscous, or a green salad.
Chef’s Tip: For a richer flavor, marinate the chicken in olive oil, garlic, and herbs for 30 minutes before searing.
