Ingredients


2 oranges, peeled and sliced


1 grapefruit, peeled and sliced


1 small fennel bulb, thinly sliced


½ cup pomegranate seeds


2 tablespoons extra virgin olive oil


1 teaspoon honey


Fresh mint leaves, chopped


Salt and black pepper, to taste



Instructions


1. Arrange citrus slices and fennel in a bowl or platter.



2. Sprinkle pomegranate seeds and chopped mint over the top.



3. Whisk olive oil, honey, salt, and pepper; drizzle over the salad.



4. Serve chilled.

Ingredients


3 large carrots, grated

Instructions
